Tequila is the reason this room has a second name. The list runs from blanco through extra añejo and out into mezcal, and nobody is going to make you feel foolish for asking where to start.
Blanco

Straight out of the still. Pepper, citrus and cooked agave, with nothing in the way. The honest test of a distillery.
Reposado
RestedTwo months to a year in oak
Long enough in barrel to round the edges, short enough that the agave still leads. The house pour for most people most nights.
Añejo
AgedOne to three years in oak
Vanilla, caramel and dried fruit come forward. Drinks closer to a whiskey and rewards being left alone in a glass.
Extra Añejo
Extra agedOver three years in oak
The category only exists since 2006. Dark, slow and priced accordingly. Order it neat or not at all.
Mezcal
Varies by maker
Not tequila, and not trying to be. Agave roasted in earth pits, which is where the smoke comes from. Usually made in far smaller batches.
